Steps
1. In a small pot, bring the vegetable broth to a simmer.
2. Add the whole grain cereal and cook according to package instructions, usually about 5 minutes, until tender.
3. In a separate pan, heat the olive oil over medium heat and add the fresh spinach. Sauté for 2-3 minutes until wilted, then season with salt and pepper.
4. Meanwhile, poach the egg in simmering water (or use the method you prefer) for about 3-4 minutes until the white is set but the yolk remains runny.
5. Once the cereal is cooked, spoon it into a bowl, top with sautéed spinach, and gently place the poached egg on top. Add optional grated cheese if desired.
6. Season with additional salt and pepper to taste, and enjoy your savory cereal bowl.
