Steps
1. Preheat the grill or a grill pan over medium-high heat.
2. Brush the chicken breast with olive oil and season with salt and pepper.
3. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until fully cooked. Remove from heat and let it rest.
4. Place the peach halves on the grill, cut side down, and grill for 3-4 minutes until caramelized.
5. In a bowl, combine the salad greens with balsamic vinegar and toss to coat.
6. Slice the grilled chicken and peaches.
7. Arrange the salad greens on a plate, top with sliced chicken and peaches.
8. Drizzle with honey if using, sprinkle with feta cheese, and serve.
