Steps

1. Preheat oven to 400°F (200°C). 2. In a small bowl, mix rosemary, thyme, minced garlic, salt, and pepper. 3. Rub the lamb chop with olive oil, then coat it evenly with the herb mixture. 4. Heat a skillet over medium-high heat and sear the lamb chop for 2 minutes on each side until browned. 5. Transfer the skillet to the oven and roast the lamb chop for 8-10 minutes for medium-rare, or until desired doneness. 6. While the lamb is roasting, mix Greek yogurt, minced garlic, and lemon juice in a small bowl to make the sauce. 7. Remove lamb from oven and let it rest for 5 minutes. 8. Serve the lamb chop topped with garlic yogurt sauce and garnish with fresh parsley.
