
Steps
- Preheat your grill or grill pan to medium-high heat.
- Season the chicken breast with salt, pepper, and a drizzle of olive oil.
- Grill the chicken for about 6-7 minutes on each side until fully cooked. Remove from grill and let it rest.
- While the chicken is resting, grill the peach halves cut-side down for about 3-4 minutes until caramelized.
- In a bowl, toss the mixed greens with balsamic vinegar and remaining olive oil.
- Slice the grilled chicken and peaches.
- Assemble the salad by placing the greens on a plate, topping with sliced chicken, grilled peaches, feta, and walnuts if using.
- Drizzle with extra balsamic vinegar if desired and serve immediately.
