Steps
1. Preheat your grill or grill pan to medium-high heat.
2. Season the chicken breast with salt, pepper, and a drizzle of olive oil.
3. Grill the chicken for about 6-7 minutes on each side until fully cooked. Remove from grill and let it rest.
4. While the chicken is resting, grill the peach halves cut-side down for about 3-4 minutes until caramelized.
5. In a bowl, toss the mixed greens with balsamic vinegar and remaining olive oil.
6. Slice the grilled chicken and peaches.
7. Assemble the salad by placing the greens on a plate, topping with sliced chicken, grilled peaches, feta, and walnuts if using.
8. Drizzle with extra balsamic vinegar if desired and serve immediately.
