Steps
1. Preheat the grill or a grill pan over medium-high heat.
2. Season the chicken breast with salt and pepper and drizzle with olive oil.
3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from grill and let it rest.
4. While the chicken is resting, place the peach halves cut-side down on the grill and cook for about 2-3 minutes until grill marks appear.
5. In a large bowl, combine mixed greens, grilled peaches, and sliced chicken.
6. In a small bowl, whisk together balsamic vinegar and honey, then drizzle over the salad.
7. Top with feta cheese if using, toss gently, and serve immediately.
