
Steps
- Preheat the grill or grill pan over medium heat.
- Brush the chicken breast with olive oil and season with salt and pepper.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from the grill and let it rest.
- While the chicken is grilling, cut the peach halves into thick slices and grill them for 2-3 minutes on each side until they have nice grill marks.
- In a large bowl, combine the mixed greens, grilled peach slices, and sliced grilled chicken.
- Drizzle with balsamic vinegar and toss gently to combine.
- Serve immediately, topped with optional feta cheese or walnuts if desired.
