Steps
1. Preheat the grill or grill pan over medium heat.
2. Brush the chicken breast with olive oil and season with salt and pepper.
3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from the grill and let it rest.
4. While the chicken is grilling, cut the peach halves into thick slices and grill them for 2-3 minutes on each side until they have nice grill marks.
5. In a large bowl, combine the mixed greens, grilled peach slices, and sliced grilled chicken.
6. Drizzle with balsamic vinegar and toss gently to combine.
7. Serve immediately, topped with optional feta cheese or walnuts if desired.
