Steps
1. Preheat the grill or grill pan to medium heat.
2. Season the chicken breast with salt and pepper.
3. Grill the chicken for about 6-7 minutes per side, or until fully cooked. Remove and let rest.
4. Place peach halves on the grill, cut side down, and grill for 3-4 minutes until caramelized.
5. In a small bowl, whisk together olive oil, honey, and balsamic vinegar to make the dressing.
6. Slice the grilled chicken and peaches.
7. Arrange mixed greens on a plate, top with sliced chicken and peaches.
8. Drizzle the dressing over the salad and sprinkle with feta cheese if using.
9. Serve immediately.
