Steps
1. Preheat a grill or grill pan over medium heat.
2. Brush the chicken breast with half the olive oil, season with salt and pepper.
3. Grill the chicken for 5-6 minutes per side until fully cooked, then let rest.
4. Brush the peach halves with remaining olive oil and grill for 3-4 minutes each side until grill marks appear and peaches soften.
5. Slice the grilled chicken and peaches.
6. In a small bowl, whisk together honey and balsamic vinegar.
7. In a salad bowl, combine mixed greens, grilled chicken slices, grilled peach slices, and fresh basil.
8. Drizzle the honey-balsamic dressing over the salad and toss gently.
9. Optionally, sprinkle crumbled feta cheese on top before serving.
