Steps
1. Season the chicken breast with salt and pepper.
2. Heat olive oil in a skillet over medium heat.
3. Cook the chicken breast for about 6-7 minutes on each side until golden and cooked through, then remove from pan and keep warm.
4. In the same skillet, add butter and sliced pears.
5. Cook pears for about 3-4 minutes until they start to caramelize.
6. Drizzle honey over pears and stir gently.
7. Return the chicken to the skillet and top with goat cheese.
8. Cover the pan and let it cook for another 2 minutes until cheese softens.
9. Sprinkle fresh thyme leaves if using, then serve warm.
