Steps
1. Preheat your grill or grill pan over medium heat.
2. Brush the chicken breast with olive oil, season with salt and pepper, and grill for about 6-7 minutes on each side or until fully cooked and juices run clear.
3. While the chicken is grilling, place the peach halves cut-side down on the grill and grill for about 2-3 minutes until they have nice grill marks and are slightly softened.
4. Remove the grilled chicken and peaches from the grill and let them rest for a few minutes before slicing.
5. In a large bowl, combine mixed greens, sliced chicken, and peaches. If desired, sprinkle with feta cheese and walnuts.
6. Drizzle with balsamic vinegar, toss gently, and serve immediately.
