
Steps
- Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a non-stick pan over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
- Add diced chicken breast to the pan, season with salt and pepper, and cook until fully cooked through (about 6-7 minutes).
- Add cherry tomatoes and fresh spinach to the pan. Cook until spinach wilts (about 2 minutes).
- Toss the cooked pasta into the pan with the chicken and vegetables. Mix well to combine and heat through.
- Plate the pasta, sprinkle with grated Parmesan cheese if using, and garnish with fresh basil leaves. Serve warm.
