Steps
1. Heat the olive oil in a medium skillet over medium heat.
2. Add the onions and garlic and cook them until they soften.
3. Add the carrots, zucchini, and bell pepper and cook for 5-7 minutes until all the vegetables are soft.
4. Add the quinoa, black beans, and Italian seasoning and cook for 3-4 minutes or until the quinoa is cooked through.
5. Season with salt and pepper to taste.
6. Serve warm.
