Steps
1. Preheat oven to 200C.
2. Cut the cauliflower into small pieces and put it in a food processor. Pulse it until it looks like rice.
3. In a sauce pan, heat the olive oil and add the cauliflower rice. Saute for 3 minutes.
4. In a bowl mix the cod, coconut milk, salt, pepper, paprika, coriander and the optional chilli.
5. Place thecod onto a greased baking dish.
6. Place it in the oven and cook for 20 minutes or until it is cooked through.
7. Serve the cod over the cauliflower rice and add the creamy coconut sauce if desired.
