Steps
1. Heat olive oil in a pan over medium heat.
2. Add diced onion and bell pepper, sauté for 3-4 minutes until soft.
3. Stir in minced garlic, diced carrot, and zucchini. Cook for another 5 minutes.
4. Add the canned diced tomatoes, kidney beans, black beans, vegetable broth, chili powder, cumin, salt, and pepper.
5. Bring to a simmer and cook for 15-20 minutes, stirring occasionally.
6. Taste and adjust seasoning if needed.
7. Serve hot, garnished with fresh cilantro if desired.
