Steps
1. Preheat your oven to 400°F (200°C).
2. In a small bowl, mix the chopped rosemary, thyme, minced garlic, salt, and pepper.
3. Rub the olive oil over the lamb chop, then coat it with the herb mixture.
4. Heat a skillet over medium-high heat and sear the lamb chop for 2-3 minutes on each side until browned.
5. Transfer the lamb chop to the oven and roast for about 10-12 minutes for medium-rare, or to your preferred doneness.
6. While the lamb is roasting, boil the cubed potatoes in salted water until tender, about 15 minutes.
7. Drain the potatoes and return them to the pot. Add butter, milk, roasted garlic (if using), and salt. Mash until creamy and smooth.
8. Serve the lamb chop alongside the garlic mashed potatoes, garnishing with extra herbs if desired.
