Steps
1. Preheat the oven to 400°F (200°C).
2. In a small bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper to create a paste.
3. Rub the herb mixture all over the lamb chops.
4. Heat a skillet over medium-high heat and sear the lamb chops for 2-3 minutes on each side until browned.
5. Transfer the chops to a baking dish and roast in the oven for 8-10 minutes for medium-rare.
6. Meanwhile, boil the cubed potato and whole garlic clove in salted water until tender, about 15 minutes.
7. Drain the potatoes and garlic, then mash them together with butter, milk, and salt until smooth.
8. Serve the lamb chops with a generous side of garlic mash.
