
Steps
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper to create a paste.
- Rub the herb mixture all over the lamb chops.
- Heat a skillet over medium-high heat and sear the lamb chops for 2-3 minutes on each side until browned.
- Transfer the chops to a baking dish and roast in the oven for 8-10 minutes for medium-rare.
- Meanwhile, boil the cubed potato and whole garlic clove in salted water until tender, about 15 minutes.
- Drain the potatoes and garlic, then mash them together with butter, milk, and salt until smooth.
- Serve the lamb chops with a generous side of garlic mash.
