Steps

1. Preheat your oven to 400°F (200°C). 2. In a small bowl, mix olive oil, rosemary, thyme, minced garlic, salt, and pepper. 3. Rub the herb mixture over both sides of the lamb chops. 4. Heat a skillet over medium-high heat and sear the lamb chops for 2-3 minutes on each side until browned. 5. Transfer the lamb chops to a baking dish and roast in the oven for 10-12 minutes for medium-rare. 6. Meanwhile, boil the cubed potato in salted water until tender, about 15 minutes. 7. Drain the potatoes and return them to the pot. Add butter, milk, minced garlic, and salt; mash until smooth and creamy. 8.
