Steps
1. Preheat the oven to 400°F (200°C).
2. In a small bowl, mix olive oil, rosemary, thyme, minced garlic, salt, and pepper to create a marinade.
3. Rub the marinade all over the lamb chops and let them sit for 15 minutes.
4. While the lamb marinates, place the diced potato in a pot of boiling water and cook until tender (about 15 minutes).
5. Drain the potatoes and return them to the pot. Add butter, milk, minced garlic, and salt. Mash until creamy and smooth.
6. Heat an oven-safe skillet over medium-high heat. Sear the lamb chops for about 2-3 minutes on each side until browned.
7. Transfer the skillet to the oven and roast for an additional 6-8 minutes for medium-rare doneness.
8. Serve the lamb chops alongside the garlic mashed potatoes.
