Steps
1. Preheat your oven to 400°F (200°C).
2. Wash and dice the potatoes into 1-inch cubes.
3. In a bowl, toss the potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper.
4. Spread the potatoes evenly on a baking sheet lined with parchment paper.
5. Roast in the oven for 25-30 minutes, turning halfway through, until golden brown and crispy.
6. Remove from oven, garnish with fresh parsley, and serve hot.
