
Steps
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix olive oil, minced garlic, rosemary, thyme, lemon zest, salt, and pepper.
- Rub the herb mixture all over the rabbit leg, ensuring it's well coated.
- In an oven-safe skillet, heat a little oil over medium heat and sear the rabbit leg for about 3-4 minutes on each side until golden brown.
- Pour the chicken broth into the skillet and place lemon slices on top of the rabbit.
- Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the rabbit is cooked through and reaches an internal temperature of 160°F (70°C).
- Remove from the oven, let it rest for a few minutes, then serve hot, garnished with additional herbs if desired.
