Herb-Roasted Rabbit with Garlic and Lemon

Steps

1. Preheat your oven to 200°C (400°F). 2. In a small bowl, mix the minced garlic, rosemary, thyme, lemon zest, olive oil, salt, and pepper. 3. Rub the herb mixture over the rabbit leg, ensuring it's well-coated. 4. Place the rabbit leg in a baking dish and surround it with the halved baby potatoes and green beans. 5. Squeeze the lemon juice over the dish and add a splash of water to the bottom of the baking dish. 6. Roast in the oven for 35-40 minutes, or until the rabbit is cooked through and the vegetables are tender. 7. Let it rest for 5 minutes before serving. Enjoy!
