Steps
1. Preheat your oven to 375°F (190°C).
2. In a bowl, mix olive oil, minced garlic, rosemary, thyme, lemon juice, lemon zest, salt, and pepper.
3. Rub the herb mixture all over the rabbit leg, ensuring it's well coated.
4. Place the rabbit leg in a baking dish and pour the chicken broth around it.
5. Cover the baking dish with foil and roast in the oven for 45 minutes.
6. Remove the foil and roast for an additional 15 minutes, basting occasionally, until the rabbit is golden and cooked through.
7. Let it rest for a few minutes before serving, garnished with fresh herbs if desired.
