Herb-Roasted Rabbit with Garlic and Rosemary

Steps

1. Preheat your oven to 375°F (190°C). 2. In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper. 3. Rub the herb mixture all over the rabbit leg, ensuring it's well-coated. 4. In a baking dish, arrange the quartered onion and halved baby potatoes. 5. Place the rabbit leg on top of the vegetables and pour the vegetable broth around them. 6. Cover the dish with aluminum foil and roast in the preheated oven for 30 minutes. 7. Remove the foil and roast for an additional 15-20 minutes until the rabbit is golden and cooked through. 8. Let it rest for a few minutes before serving, then enjoy your herb-roasted rabbit.
