
Steps
- Preheat your oven to 375°F (190°C).
- In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper.
- Rub the herb mixture all over the rabbit leg, ensuring it's well-coated.
- In a baking dish, arrange the quartered onion and halved baby potatoes.
- Place the rabbit leg on top of the vegetables and pour the vegetable broth around them.
- Cover the dish with aluminum foil and roast in the preheated oven for 30 minutes.
- Remove the foil and roast for an additional 15-20 minutes until the rabbit is golden and cooked through.
- Let it rest for a few minutes before serving, then enjoy your herb-roasted rabbit.
