- Rub the herb paste all over the rabbit leg, ensuring it is well-coated.
- In a baking dish, arrange the sliced carrot and diced potato as a bed for the rabbit.
- Place the rabbit leg on top of the vegetables and pour the vegetable broth around it.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the rabbit is cooked through and golden brown.
