Steps

3. Rub this mixture all over the rabbit leg, ensuring it is well coated.
4. Place the rabbit leg in a baking dish and surround it with the diced carrot and zucchini.
5. Roast in the oven for about 30-35 minutes, or until the rabbit is cooked through and the vegetables are tender.
6. Remove from the oven and let it rest for a few minutes.
7. Serve with a lemon wedge for added brightness.
