Herb-Roasted Rabbit with Garlic and Vegetables

Steps

1. Preheat your oven to 375°F (190°C). 2. In a small bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper. 3. Rub the herb mixture all over the rabbit leg, ensuring it's well-coated. 4. In a baking dish, place the diced carrot and potato, and pour the chicken broth over them. 5. Nestle the seasoned rabbit leg on top of the vegetables. 6. Cover the dish with aluminum foil and roast in the oven for 45 minutes. 7. Remove the foil and roast for an additional 15 minutes, until the rabbit is golden and cooked through. 8. Let it rest for a few minutes before serving with the roasted vegetables.
