Steps
1. Preheat the oven to 400°F (200°C). 2. In a small bowl, mix honey, soy sauce, olive oil, salt, and pepper. Brush the mixture over the salmon fillet. 3. Place the salmon on a baking sheet lined with foil. 4. In a separate bowl, toss the mixed bell peppers, red onion, zucchini, and minced garlic with olive oil, salt, and pepper. Spread the vegetables around the salmon on the baking sheet. 5. Roast in the oven for 15-20 minutes or until the salmon is cooked through and the vegetables are tender. 6. Serve the honey glazed salmon with the roasted vegetables on the side.
