Steps
1. In a small bowl, mix together Dijon mustard and honey until well combined.
2. Season the chicken breast with salt and pepper on both sides.
3. Heat olive oil in a skillet over medium heat.
4. Add the chicken breast to the skillet and cook for about 5 minutes on one side.
5. Flip the chicken, brush the honey mustard mixture generously on top, and cook for another 5-7 minutes, or until the internal temperature reaches 165°F (75°C).
6. Remove from heat, let rest for a couple of minutes, then garnish with fresh parsley if desired.
