Steps

1. In a pot, heat the olive oil over medium heat. 2. Add the chopped onion and garlic, sauté until softened. 3. Add the diced beef, cooking until browned on all sides. 4. Stir in the paprika and tomato paste, mixing well. 5. Add the sliced carrot, diced potato, and bell pepper to the pot. 6. Pour in the beef broth, season with salt and pepper, and bring to a boil. 7. Reduce heat, cover, and simmer for about 45 minutes, or until the beef is tender. 8. Adjust seasoning as needed and serve hot, garnished with fresh parsley if desired.
