Steps
1. In a small bowl, whisk together olive oil, lemon juice, lemon zest, oregano, garlic powder, salt, and pepper.
2. Place the chicken breast in a resealable plastic bag and pour the marinade over it. Seal the bag and refrigerate for at least 30 minutes.
3. Preheat the grill or grill pan over medium-high heat.
4. Remove the chicken from the marinade and grill for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
5. Let the chicken rest for a few minutes before slicing.
6. Serve on a bed of mixed greens and garnish with lemon wedges.
