
Steps
- In a small bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Marinate the chicken breast in this mixture for at least 15 minutes.
- Rinse quinoa under cold water. In a small pot, bring 1/2 cup water to a boil, add quinoa, reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
- While quinoa cooks, preheat grill or grill pan over medium heat.
- Grill the marinated chicken breast for 6-7 minutes per side or until fully cooked and juices run clear.
- Fluff cooked quinoa with a fork and transfer to a bowl. Add cherry tomatoes, cucumber, parsley, olive oil, salt, and pepper. Mix well.
- Serve grilled chicken alongside the quinoa salad.

- 1 boneless, skinless chicken breast (about 150g)
