Steps
1. In a small bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Marinate the chicken breast in this mixture for at least 15 minutes.
2. Rinse quinoa under cold water. In a small pot, bring 1/2 cup water to a boil, add quinoa, reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
3. While quinoa cooks, preheat grill or grill pan over medium heat.
4. Grill the marinated chicken breast for 6-7 minutes per side or until fully cooked and juices run clear.
5. Fluff cooked quinoa with a fork and transfer to a bowl. Add cherry tomatoes, cucumber, parsley, olive oil, salt, and pepper. Mix well.
6. Serve grilled chicken alongside the quinoa salad.
