Steps
1. In a bowl, combine olive oil, lemon juice, garlic, thyme, salt, and pepper. Marinate the chicken breast for at least 15 minutes.
2. While the chicken marinates, rinse the quinoa under cold water.
3. In a small pot, bring water to a boil, add quinoa, reduce heat and simmer covered for 12 minutes or until water is absorbed.
4. Fluff quinoa with a fork and mix in cherry tomatoes, cucumber, parsley, and a pinch of salt.
5. Heat a grill pan over medium-high heat and cook the chicken breast for 5-7 minutes per side or until fully cooked and nicely charred.
6. Let the chicken rest for a couple of minutes before slicing.
7. Plate the chicken alongside the quinoa salad and serve immediately.
