Lemon Herb Quinoa Salad

A refreshing and light quinoa salad, bursting with citrus flavor and packed with fresh herbs. This dish is low in oil and meat-free, making it a perfect choice for a healthy meal.

Steps

1. Rinse the quinoa under cold water until the water runs clear. 2. In a small pot, bring 1 cup of water to a boil. Add the quinoa, reduce to a simmer, cover, and cook for 15 minutes or until the water is absorbed. 3. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork. 4. In a bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, parsley, and mint. 5. Drizzle with lemon juice and olive oil, then season with salt and pepper. 6. Toss gently to combine and serve immediately or chill in the refrigerator before serving.
