
Steps
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together the minced garlic, chopped thyme, chopped rosemary, olive oil, salt, and pepper.
- Pat the chicken dry and rub the herb mixture all over the chicken, including under the skin.
- Place the sliced lemons inside the cavity of the chicken.
- Tie the legs together with kitchen twine and place the chicken on a roasting rack in a roasting pan.
- Roast the chicken for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C) when measured with a meat thermometer.
- Let the chicken rest for 10 minutes before carving and serving.
