
Steps
- Preheat the oven to 200°C.
- Rinse the chicken thoroughly and pat it dry with paper towels.
- Cut one lemon into slices and stuff them inside the chicken cavity along with the garlic cloves, rosemary, and thyme sprigs.
- Squeeze the juice of the remaining lemon over the chicken and rub it all over.
- Season the chicken generously with salt and pepper, ensuring to coat it well on all sides.
- Drizzle the olive oil over the chicken and rub it evenly.
- Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes or until the internal temperature reaches 75°C.
- Baste the chicken with the pan juices every 20 minutes to keep it moist.
- Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
- Serve hot and enjoy!
