Lemon Herb Roasted Chicken

A flavorful and juicy roasted chicken infused with the freshness of lemon and herbs.

Steps

1. Preheat the oven to 200°C. 2. Rinse the chicken thoroughly and pat it dry with paper towels. 3. Cut one lemon into slices and stuff them inside the chicken cavity along with the garlic cloves, rosemary, and thyme sprigs. 4. Squeeze the juice of the remaining lemon over the chicken and rub it all over. 5. Season the chicken generously with salt and pepper, ensuring to coat it well on all sides. 6. Drizzle the olive oil over the chicken and rub it evenly. 7. Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes or until the internal temperature reaches 75°C. 8. Baste the chicken with the pan juices every 20 minutes to keep it moist. 9. Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving. 10. Serve hot and enjoy!
