Steps
1. In a blender, combine the diced mango, honey, soy sauce, and minced garlic. Blend until smooth to create the mango glaze.
2. Season the chicken breast with salt and pepper on both sides.
3. Heat olive oil in a skillet over medium-high heat. Add the chicken breast and cook for about 5-7 minutes on each side until golden brown and cooked through.
4. Pour the mango glaze over the chicken in the skillet. Allow it to simmer for 2-3 minutes, coating the chicken evenly.
5. Remove the chicken from the skillet and let it rest for a minute before slicing.
6. Serve the chicken drizzled with extra mango glaze and garnish with fresh cilantro.
