Steps
1. Rinse quinoa under cold water and drain.
2. In a small pot, combine quinoa and water. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes until water is absorbed.
3. While quinoa is cooking, season chicken breast with olive oil, salt, and pepper.
4. Heat a grill pan over medium-high heat and grill chicken for about 6-7 minutes on each side, or until cooked through.
5. Remove chicken from the pan and let it rest for 5 minutes before slicing.
6. In a bowl, combine cooked quinoa, cherry tomatoes, cucumber, and red bell pepper.
7. Drizzle with lemon juice, and season with salt and pepper. Toss gently to combine.
8. Serve quinoa mixture topped with sliced grilled chicken and garnish with fresh parsley.
