Mediterranean Veggie & Cheese Sandwich

Steps

1. Spread butter evenly on one side of each bread slice. 2. On the unbuttered side of one slice, layer shredded carrots evenly. 3. Add cheese slices on top of the carrots. 4. Distribute sliced olives and bell peppers evenly over the cheese. 5. Season lightly with salt and pepper. 6. Place the second slice of bread on top, buttered side facing out. 7. Heat a skillet over medium heat and toast the sandwich for 3-4 minutes on each side until golden brown and cheese is melted. 8. Remove from skillet, let cool slightly, slice in half, and serve.
