Steps
1. Preheat your oven to 350°F (175°C).
2. In a mixing bowl, whisk together the grated carrot, cooled coffee, egg, sugar, vanilla extract, cinnamon, and salt until well combined.
3. Gradually sprinkle in the cornstarch while whisking to avoid lumps.
4. Pour the mixture into a small greased ramekin or oven-safe dish.
5. Place the ramekin in a larger baking dish and add hot water to the outer dish to create a water bath.
6. Bake in the preheated oven for 25-30 minutes, or until the flan is set.
7. Remove from the oven and let it cool for a few minutes before refrigerating for at least 1 hour.
8. Serve chilled, optionally garnished with a sprinkle of cinnamon or a dollop of whipped cream.
