Mediterranean Orange Almond Cake

Steps

1. Preheat the oven to 350°F (175°C). 2. Wash the orange thoroughly and cut it into quarters, removing any seeds. 3. Place the orange quarters in a blender or food processor and blend until smooth. 4. In a mixing bowl, combine the orange puree, almond meal, granulated sugar, eggs, baking powder, and vanilla extract. Mix well until all ingredients are combined. 5. Grease a round cake pan with olive oil or line it with parchment paper. Pour the batter into the prepared pan. 6. Bake for 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean. 7. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. 8. Once cooled, dust the top of the cake with powdered sugar. Serve and enjoy!
