Steps
1. Pat the sea bass fillet dry and season both sides with salt and pepper.
2. In a small bowl, combine chopped olives, capers, sun-dried tomatoes, orange zest, lime juice, and cilantro to create the tapenade. Set aside.
3. In a blender, combine avocado, lime juice, and Greek yogurt. Blend until smooth and creamy. Adjust seasoning with salt if needed.
4. Heat olive oil in a non-stick pan over medium-high heat.
5. Place the sea bass fillet skin-side down and sear for 3-4 minutes until the skin is crispy.
6. Carefully flip the fillet and cook for an additional 2-3 minutes until the fish is opaque and cooked through.
7. Spread a thin layer of the avocado-lime purée on the serving plate.
8. Place the seared sea bass on top, and spoon the citrus olive tapenade over the fillet.
9. Garnish with microgreens or edible flowers for an elegant presentation.
10. Serve immediately and enjoy the vibrant flavors.
