Steps

1. Rinse the quinoa under cold water in a fine-mesh sieve. 2. In a small saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the water is absorbed. 3. Meanwhile, in a dry skillet, toast the mixed nuts over medium heat for about 5 minutes until fragrant. 4. In a bowl, combine the cooked quinoa, toasted nuts, cherry tomatoes, and avocado. 5. Drizzle olive oil and lemon juice over the mixture, and season with salt and pepper to taste. 6. Toss gently to combine and garnish with fresh parsley before serving.
