Steps

1. Rinse the quinoa under cold water in a fine-mesh sieve. 2. In a small saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the water is absorbed. 3. Meanwhile, in a dry skillet, toast the mixed nuts over medium heat for about 5 minutes until fragrant. 4. In a bowl, combine the cooked quinoa, toasted nuts, cherry tomatoes, and avocado. 5.
