Pan-Seared Halloumi with Herbed Lemon Dressing

A simple and flavorful dish featuring crispy pan-seared halloumi cheese drizzled with a fresh lemon and herb dressing. Served optionally with a light arugula and cherry tomato salad for a refreshing contrast.

Steps

1. Heat the avocado oil or ghee in a non-stick skillet over medium heat. 2. Once hot, add the halloumi slices and cook for 2-3 minutes on each side until golden brown and crispy. 3. While the cheese is cooking, in a small bowl combine the extra virgin olive oil, fresh lemon juice, chopped dill, chopped parsley, salt, black pepper, and red pepper flakes (if using). Mix well. 4. Remove the halloumi from the skillet and place on a serving plate. 5. Drizzle the herbed lemon dressing evenly over the hot halloumi slices. 6. For the optional side salad, toss arugula and cherry tomatoes with a little olive oil, salt, and pepper. 7. Serve the halloumi warm alongside the fresh salad.
