Pesto Chicken and Vegetables

This is a delicious one-pan meal featuring juicy chicken, fresh vegetables and creamy pesto.

Steps

1. Preheat oven to 375 F. 2. Cut bell pepper and onion into thin strips. 3. Heat olive oil in a large skillet over medium-high heat and cook chicken for about 10 minutes. 4. Top chicken with pesto sauce and let cook for an additional 5 minutes. 5. Add bell pepper and onion strips and mix gently with chicken and pesto. Let cook for 5 minutes stirring occasionally. 6. Transfer skillet to preheated oven and bake for 15 minutes. 7. Top with Parmesan cheese and bake for an additional 5 minutes.

Ingredients

1 chicken breast, 2 tablespoons pesto, 2 tablespoons olive oil, 1 bell pepper, 1 onion, 2 tablespoons Parmesan cheese, Salt and pepper to taste.
