Steps
1. Heat the vegetable oil in a pan over medium heat.
2. Add the onion and bell pepper, and cook until they start to soften, about 3-4 minutes.
3. Stir in the garlic and cook for an additional minute.
4. Add the pickles to the pan and cook for 2-3 minutes, until heated through.
5. In a small bowl, mix together the soy sauce, vinegar, sugar, salt, and pepper.
6. Pour the sauce over the pickles and vegetables, and toss everything together until well coated.
7. Cook for another 1-2 minutes, until the flavors meld together.
