Asian Fish Omelette

A flavorful and low-carb main dish with a twist of Asian flavors. This omelette combines eggs and fish with a tangy tomato and soy sauce glaze.

Steps

1. Beat the eggs in a bowl and set aside. 2. Heat a non-stick pan over medium heat and add the fish fillet. Cook for 2-3 minutes on each side, until cooked through. Remove from the pan and flake the fish into small pieces. 3. In the same pan, add the beaten eggs and cook until the edges start to set. 4. Sprinkle the flaked fish and diced tomato over one half of the omelette. 5. Fold the other half of the omelette over the filling and cook for another minute. 6. In a small bowl, mix together the ketchup and soy sauce. Drizzle the sauce over the omelette. 7. Cook for an additional 1-2 minutes, until the omelette is fully cooked and the sauce has thickened slightly. 8. Serve hot and enjoy!
