Steps
1. Heat a large skillet over medium-high heat, and add the olive oil. Once the oil is hot, add the diced vegetables and pineapple and stir-fry for 5 minutes.
2. Add the cooked rice to the skillet, and season with salt and pepper. Continue to stir-fry for another 5-7 minutes or until the rice is warmed through.
3. Serve the Pineapple Fried Rice warm. Enjoy!
