1. Cook the egg noodles according to package instructions, drain, and set aside. 2. Heat the vegetable oil in a pan over medium-high heat. 3. Add minced garlic and stir-fry for about 30 seconds until fragrant. 4. Add the chopped bok choy, julienned carrot, and sliced bell pepper. Stir-fry for 2-3 minutes until the vegetables are tender. 5.
