Steps
1. Rinse the quinoa using a fine-mesh strainer.
2. Place the quinoa in a pot with 1 cup of water and bring to a boil over medium-high heat. Reduce to low heat and cook for 10 minutes until all the water has been absorbed.
3. In a bowl mix the black beans, cucumber, tomatoes, and red bell pepper.
4. Add the cooked quinoa, olive oil, and salt.
5. Mix everything together.
6. Serve with fresh coriander (optional).
