Steps

Preheat your oven to 375°F (190°C). Cut the top off the bell pepper and remove the seeds. In a pan, heat olive oil over medium heat and sauté the garlic until fragrant. Add the chopped spinach and cook until wilted. In a bowl, mix the cooked quinoa, spinach, black beans, diced tomatoes, cumin, salt, and pepper. Stuff the mixture into the bell pepper and top with cheese if desired. Place the stuffed pepper in a baking dish and bake for 25-30 minutes, until the pepper is tender. Serve hot and enjoy your healthy meal!
